INGREDIENTS
3 tablespoons orange juice concentrate
2 tablespoons sugar
2 tablespoons cider vinegar
1 1/2 teaspoons chopped onion
1/4 teaspoon salt
1/2 cup vegetable oil
1 1/2 teaspoons poppy seeds
1 (10 ounce) package fresh baby spinach
1 (15 ounce) can mandarin oranges, drained
2/3 cup slivered almonds, toasted

DIRECTIONS
In a blender, combine the orange juice concentrate, sugar, vinegar, onion and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds. Transfer to a small pitcher or bowl. Refrigerate for at least 1 hour or until chilled.
On salad plates, arrange the spinach, mandarin oranges and almonds. Drizzle with dressing.

I made this salad for a luncheon that i hosted for my friends. This is absolutely delicious and refreshing. My friends loved it and they even asked for the recipe. I made some more of the dressing but I cut down a bit on the sugar. And also I mixed spring mix salad with baby spinach, added dried ocean spray cranberries,sunkist ovenroasted slivered almonds and the mandarin oranges. This was a HIT. Love it!

FABULOUS SPINACH SALAD! You should really call it, "Sunshine Spinach Salad," as the dressing is the perfect balance of citrus and sweet. I added a little bit of sliced red onion, and used Sunkist sliced almonds (from the produce section). Thanks for the recipe!
