INGREDIENTS
1 (15 ounce) can white kidney or cannelini beans, rinsed and drained
1/4 cup chopped green pepper
2 green onions, thinly sliced
3 tablespoons vegetable oil
2 tablespoons vinegar
1 teaspoon sugar
1/4 teaspoon salt
Dash pepper

DIRECTIONS
In a bowl, combine beans, green peppers and onions. In a small bowl, combine oil, vinegar, sugar, salt and pepper. Pour over bean mixture and toss to coat. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

Pretty good! I used Northern beans (another white bean), about ½ cup celery instead of green pepper (my husband doesn't like green pepper), maybe a tablespoon of finely diced yellow onion (we were out of green onions), and half cider vinegar and half white vinegar. It was quite good! Next time, I might try honey instead of sugar... And black olives would be a welcome addition! Thanks for sharing, Judi!
