Ingredients

  • 6 large sweet potatoes
  • 1 (15 ounce) can apricot halves
  • 4 apple - peeled, cored and sliced
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 2 tablespoons butter

Directions

  1. Preheat oven to 350 degrees F (175 degrees C)
  2. In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.
  3. In a large casserole dish, mix potatoes and apples. Dot with butter. Sprinkle brown sugar, walnuts, and raisins on top of potato mixture. Pour apricots over top.
  4. Bake uncovered for 30 minutes.
