Sweet Potatoes With Feta Cheese

INGREDIENTS

  • 2 large sweet potatoes, peeled and sliced
  • 1 (4 ounce) package tomato basil feta cheese
  • 1 tablespoon balsamic vinegar

DIRECTIONS

  1. Place the slices of sweet potatoes into a microwave safe dish, and add just enough water to cover. Cook for 10 minutes in the microwave, or until starting to become tender.
  2. Preheat the oven's broiler. Place the sweet potato slices onto a greased broiler pan. Slice the feta cheese the best you can, and place a piece on top of each potato slice. Drizzle balsamic vinegar over all.
  3. Place under the preheated broiler for about 6 minutes, or until cheese is lightly browned.

For those who don't like sweet potatoes, this is the recipe to try! I was afraid to go too heavy on the feta, but I should have. It definitely makes the recipe.

The potatoes did not cook in the microwave in 10 minutes; they probably needed 20, but I went ahead and put them in the oven after 12 or so with the cheese and balsamic. Only the ones touching the edges and bottom of the dish were tender enough to eat. The flavor, however, was very unique and good; it was a nice change from the too-sweet sweet potato dishes I normally see.
