Sweet Potato and Turnip Swirl

INGREDIENTS

  • 1/2 pound turnips, peeled and cubed
  • 2 sweet potatoes, peeled and cubed
  • 1 teaspoon minced fresh ginger root
  • 1 tablespoon reduced fat margarine
  • 1 tablespoon white sugar
  • 2 teaspoons orange zest

DIRECTIONS

  1. In a medium saucepan over medium high heat, cover the turnips and sweet potatoes with enough water to cover. Bring to a boil and cook until soft, about 15 to 20 minutes. Drain; transfer to a food processor and puree.
  2. In a saucepan over medium heat, combine the ginger, margarine, sugar, and orange peel. Allow margarine to melt and mix ingredients together well. Add the puree and swirl together. Serve warm.

I decided to ignore the first review and try this anyway. The thought of fresh orange peel and ginger swirled with the yams sounded so good, and I figured the turnips wouldn't hurt it any. Well, nobody in my family liked this even a little bit, and we are pretty adventuresome eaters. Overall the flavor was bitter, not the sweet/spicy combination I had imagined.

Turnip is a bitter veggie. Boil the sweet potatoes separately as they take less time to cook. If you want turnip in your diet this recipe is flavourful without having too much fat (I use oil instead of margerine). I use orange peel from the spice rack--not fresh--therefore this recipe takes a minute after boiling. Easy!
