INGREDIENTS
4 cups mashed cooked sweet potatoes
3/4 cup sugar
2 tablespoons butter, softened
1/3 cup milk
1 teaspoon vanilla extract
1/2 teaspoon salt
TOPPING:
2/3 cup packed brown sugar
2/3 cup chopped pecans
2/3 cup flaked coconut
2 tablespoons butter, melted

DIRECTIONS
In a large bowl, combine the sweet potatoes, sugar, butter, milk, vanilla and salt; beat until smooth. Spoon into a greased 2-1/2-qt. baking dish. Combine the topping ingredients; sprinkle over potato mixture.
Bake, uncovered, at 350 degrees F for 40-45 minutes or until heated through and topping is browned.
FOOTNOTE
TEST KITCHEN TIP The potato mixture can be prepared ahead of time and refrigerated. Remove from the refrigerator 20 minutes before baking, then sprinkle with the topping just before putting it in the oven.

I made it for Christmas eve dinner. My mom loves sweet potato's and she just loved this!!! I had some left and brought them to work today and everyone here ate the rest! Now I will be bringing it for potlucks I think! :) Yummy it is definatley a keeper!!! The only thing I bought way to many potatos you only need 2 big ones or 3 small ones.

My family doesn't like pecans or coconut so I left this off the topping and it was quite sweet. The next day I added marshmallows & raisins on the top and they loved it! I'll use this recipe again.

I dont care for sweet potatos or coconut, but together with the added sweetness of sugar and brown sugar, it's fantastic! However, if you're using canned yams, it's a good idea to drain them before you mash them! My Sweet Potato Souffle was runnier this time than the one I made several years ago. Perhaps next time I will use a Sweet Potato Souffle which contains eggs.
