Ingredients

  • 1 (9 inch) pie shell
  • 1 (16 ounce) can mashed sweet potatoes
  • 3/4 cup milk
  • 3/4 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 2 eggs
  • 1 tablespoon butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground nutmeg

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large mixing bowl combine sweet potatoes, milk, sugar, corn syrup, eggs, butter or margarine, salt, cinnamon, and nutmeg. Blend with mixer or hand-held beaters until smooth. Pour mixture into pie shell.
  3. Place in preheated oven and bake for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, or until knife inserted in center comes out clean. May have to shield crust edges with foil for last 20 minutes to prevent burning.
