  1. Boil (or microwave) sweet potatoes in their jackets until cooked (a thin knife should be able to go through easily).
  2. Beat the eggs.
  3. Put butter and sugar in a large bowl.
  4. Peel hot potatoes--with knife, cut top and peel down, removing any stringiness from the potato with the skin, cut bottoms. Place hot, peeled potatoes on the butter in the bowl with sugar, crush together. Add beaten eggs. Stir in spices (to taste). Pour into 2 unbaked pie crusts. Should be the consistency of pumpkin pie mix.
  5. Bake at 350 degrees F (175 degrees C), for 45-55 minutes, until brown.

My mother was the only one I knew who could make wonderful sweet potato pies. This had to have been the recipe she used. My husband and children went wild over them. - Nina

As sweet potato pies go it's OK. You might think with all the butter it's sure to taste amazing, but I've made better recipes before with less butter and they tasted just as good, some even better. Don't egt me wrong it tastes good, but if you want to be health concious there's plenty more spp recipes that are better. May be butter overload.

I totally can not bake and this turned out excellent!!! YUMMY! I think the ratio of butter, sugar and so on was perfect. Thanks for sharing this wonderful recipe. I'll be sure to use it again!!

Nancy the sweet potato pie was off the chain!!!! I was a little sketical about the amount of butter, but my husband said the pie was greaaattttt!!!

I made this recipe over Christmas. My family loved it. The overall preperation was easy and fast. I give it 2 thumbs up! :o)

This made two awesome, artery clogging, pies...awarded 5 stars by my neighbor on her 98th birthday and my hubby. But there is one very misleading ingredient here...6 sweet potatoes. 6 of the small thin tubers...or 6 of the huge, almost football size that I buy locally that are still tender to the skin? I quickly realized that 6 would feed half of our small community and dropped it to 4...then could only get three into my large pot. I weighed them and they came to 3 lbs. So 3 lbs. of sweet potatoes is much more accurate. Those pies sure disappeared quickly and deserved every one of those stars!!!

Mmmmmmmm......I will never go back to pumpkin pie. I'm a sweet potato pie convert after this. Heaven in a pie shell.
