I made muffins out of this recipe instead of loaves. Instead of vegetable oil, I used melted butter. I also used cold unsweetened chai in place of the plain water. I got 12 large muffins out of one recipe and I baked them at 350 for 20 minutes. These turned out good, VERY moist. I think it could use a little more spice and maybe some raisins or nuts thrown in. Good base recipe to start with, IMO.

ABSOLUTELY DELICIOUS!!! Cream cheese frosting and sprinkled with cinnamon sugar. They were as cute as they were good. Kids loved them and we took one to all the neighbors. Thanks so much! Will make perfect gifts.

I've made this recipe twice, and it is delicious. My kids think it's cake! I add the zest of one orange and substitute orange juice for the water. I also add a couple tablespoons of wheat bran to boost the fiber content. Thanks for the recipe!

I made the mini loaves for our church bake sale. I followed the recipe exactly, however I added a roasted walnut cream cheese frosting on top. My husband talked me into keeping one for home, and we did not regret it. WOW, was it good! This is a nice change from the traditional banana and zuchinni breads. It was so flavorful. THANKS FOR POSTING THE RECIPE!!! I will make this again and again.
