3 cups cooked and mashed sweet potatoes
1 cup white sugar
2 eggs
1/2 cup butter
1/2 teaspoon vanilla extract
1 cup flaked coconut
1 cup packed brown sugar
1/3 cup all-purpose flour
1 cup chopped pecans
1/3 cup butter

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix the mashed sweet potatoes, white sugar, eggs, 1/2 cup of the butter or margarine, vanilla and flaked coconut. Place in heat proof 2 quart sized casserole dish.
With a fork mix the brown sugar, flour, pecans and the remaining 1/3 cup of butter or margarine. Sprinkle over the top of the potato mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes.

Kinda sweet, but it went over really well with my picky husband. :o) I love sweet potatoes, so I'm glad to have a new recipe besides bakes sweet potatoes to use.

I happened to have a sweet potato that I needed to use, but no almonds or coconuts. So it went without. The fluff was soft sweet tasting, without any unusual flavors or textures. Definitely good, nearing impressive, but not really worth the calories. All that butter and sugar! Hense the 4. Don't tell your guests what's in it and I'd give it a 5.

This Recipe was DELICIOUS!!! It was sweet enough to be a dessert but not too sweet at all. EVERYONE was blown away by this dish and wanted the recipe. Honestly, this was my favorite dish this Thanksgiving. I couldn't get enough of it!

Very good! It was just a tad too sweet for my tastes. Next time I will probably only use 3/4 cup sugar.
