Sweet Potato Casserole III

INGREDIENTS

  • 2 pounds mashed sweet potatoes
  • 2 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup butter
  • 1/3 cup sweetened condensed milk
  • 1 cup crushed cornflakes cereal
  • 1/2 cup chopped pecans
  • 1/4 cup butter
  • 2 tablespoons brown sugar

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Spray one 2 quart casserole dish with non-stick cooking spray.
  2. Combine the sweet potatoes, white sugar, 1/4 cup of the butter or margarine and the milk. Mix until well blended. Spoon sweet potato mixture into the prepare casserole dish.
  3. Bake at 350 degrees F (175 degrees C) for 15 minutes.
  4. Combine the crushed cornflakes, pecans, remaining 1/4 cup butter or margarine, and brown sugar to taste. Sprinkle over the top of the baked sweet potatoes and return to the oven and bake for another 15 minutes or until lightly browned.

I found this casserole extremely sweet. I doubled the recipe like it was suggested and hardly any was eaten at all. I would cut the sugar in half and skip the sweetened condensed milk altogether if I was to make it again although I probably wouldn't make it again.

My husband grew up eating Sweet Potato Casserole and when we got married he asked for it at Thanksgiving and I have never heard of it. So, I went looking and I found and tried several recipes and this recipe was the one that our family loved.
