I doubled this receipe and canned in 8 oz jelly jars. It made 14 8oz jars. I also simmered in a crock pot (slow cooker) for 6 hours on low. I just did not have the time to watch the stove or hang out in the kitchen for 2 1/2 hours. Needed to multitask! :) Instead of using a full size blender, I used a smoothie 20 ounce blender to process in smaller batches. I found this worked better in keeping the mixture hot during the canning process. It took a little longer, but it was worth it. I had many jars sealing without the warm water bath. Bathed them to make sure they sealed. Anyway, I just sat down to enjoy the fruit of my labor....very, very tastee.
