2 pounds sweet potatoes
2 medium apples, peeled and cored
1 tablespoon lemon juice
1/2 cup packed brown sugar
1/4 cup chopped pecans
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1/2 teaspoon orange extract
2 tablespoons butter or stick margarine

DIRECTIONS
Place sweet potatoes in a saucepan and cover with water. Bring to a boil; cook for 20-25 minutes or until tender. Drain and cool. Peel potatoes and cut into 1/4-in. slices. Place in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray.
Cut apples into 1/4-in. rings; cut in half. Arrange over sweet potatoes. Sprinkle with lemon juice. Combine the brown sugar, pecans, cinnamon, pumpkin pie spice and orange extract; sprinkle over apples. Dot with butter. Bake, uncovered, at 350 degrees F for 25-30 minutes or until apples are tender.

Nutritional Analysis: One serving (2/3 cup) equals 221 calories, 7 g fat (2 g saturated fat), 9 mg cholesterol, 48 mg sodium, 41 g carbohydrate, 4 g fiber, 2 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fruit, 1 fat.

This is a delicious recipe for sweet potatoes, and a nice alternative to the mashed/marshmallow type recipes. The sweet potatoes and apples are a great compliment. The pecan crumble tops it off with the just the right amount of sweet and crunch. The only change I made was to grate fresh orange peel into the pecan and brown sugar topping, as I didn't have orange extract. Very yummy accompaniment to the Thanksgiving turkey.

I first discovered this recipe in the Oct/Nov. 02 issue of "Light and Tasty" and it quickly became my family’s favorite sweet potato dish for our holiday dinners, as well as, holiday pot lucks. You can easily double or triple this recipe with excellent results. I have cut the prep time down by first peeling and slicing the sweet potatoes. Instead of boiling them whole for 25 mintues, as stated I steam the slices in a steamer basket for approximately 5 - 8 minutes. This cuts down the cooking time and I don't have to handle a “hot potato”. Once the potatoes are steamed I just follow the rest of the recipe as written. This is an excellent way to enjoy sweet potatoes in a healthy manner vs. the high fructose corn syrup marshmallow laden version that expands the waistline!

This was wonderful! I used 2 big sweet potatoes and 2 big Figi apples..came out wonderful! My 4 year old asked for seconds!!

This was delicious. I added extra apples, and some applesauce,and a little extra cinnamon, and baked it in my crockpot so i would have room in the oven for my stuffing. it works great in the crockpot too!

The apples didn't really cook down, even after baking it an additional 15 minutes. It was a little dry and needs a sauce. However, the flavor was good.
