I followed the recipe exactly and it had really good flavor! My one problem was cooking the sweet potatoes. Mine were fairly large and tubular, so the ends were well-cooked, but the middles were too undercooked. Maybe next time I will cut up the potatoes into equal sizes BEFORE cooking. Other that that, it was an interesting and different side dish!

Made this last nite for a BBQ and it was a hit! I made a few changes: skipped the chopped onion since the green onions I had were large, added raisins, diced celery, and sunflower seeds. Yummy! Next time I make it I'll reduce the amount of olive oil though. I made the dressing the night before and tossed everything together a couple of hours before serving and the flavors blended perfectly.

Excellent flavor combination; very refreshing for a picnic gathering or any potluck for that matter. Adding to the reviewer's comment about not overcooking the sweet potatoes, I microwaved them just enough to be slightly underdone and they continue cooking themselves in a few minutes. Will definitely make this again, perhaps adding a bit of unsalted sunflower seeds for more crunch and flavor.

i tried this one because i like apples and the combo seemed interesting, however, i don't get, 35 min at 400 degrees does not begin to cook the potatoes, nor does 55 minutes, maybe it should be covered, i tried this and also adding a little water. potatoes still to firm

Absolutely delicious! Great to take to a summertime function as this salad contain no mayo. It was much quicker to fold the salad components together rather than to layer as directed -- just be careful not to overcook the sweet potatoes or you'll end up with a bowl of mush. Thanks for the recipe!

I'm always looking for new ways to enjoy sweet potatoes (easily my favorite vegetable), and I really enjoyed this salad! I cut the oil in half and omitted the minced onion (green onions gave it enough onion flavor for me). It's an interesting and healtier take on sweet potatoes!

Made this one for a large gathering and found everyone enjoyed it. Found that when making a lot of salads it is easier to store them in zip top bags in the fridge and then put them in bowls only at seerving time. Saves room big time
