Original Recipe Yield 1 - 9 inch pie
 

Ingredients

  • 1 1/2 cups all-purpose flour
  • 4 tablespoons white sugar
  • 1/4 teaspoon salt
  • 1/4 cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 (15 ounce) containers ricotta cheese
  • 1 tablespoon all-purpose flour
  • 1 cup white sugar
  • 2 tablespoons confectioners' sugar

Directions

  1. For Crust: In a large bowl, sift together 1 1/2 cups flour, 4 tablespoons sugar and 1/4 teaspoon salt. Cut in butter, 1 egg and 1 teaspoon vanilla. Mix until dough forms. Roll into 9 inch crust. Place dough in greased pie plate. Chill for 1 hour.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. In a large bowl, beat 4 eggs. Add 1 teaspoon vanilla, 1 1/2 pounds ricotta cheese, 2 tablespoons flour, 1 cup white sugar and 2 tablespoons confectioners' sugar. Beat until smooth.
  4. Pour into crust and bake in preheated oven for 45 minutes or until lightly browned and firm.
