This quick and easy salad can be served as a side dish or a main course. I suggest serving it with sliced apple, sweet gherkins, or cornichons. Nice bread and a glass of white wine wouldn't hurt either!

MOTHER made this tasty salad for our Thanksgiving or Christmas diners. But it's so good I make it often during the year. It's an ideal accompaniment for whatever main dish we have for dinner. When served as an individual salad on a lettuce leaf, it's very attractive. --Nellie Dulin Concord, North Carolina

How could something so tiny be so good. But the peas in this layered salad have a bit of help. There's also crumbled bacon, Romaine lettuce, Cheddar cheese, sliced hard-boiled eggs, and a sweetened mayonnaise sauce. Chill and serve to eight.

Cashews and crumbled bacon make the crunch in this wonderful salad. If you make it in the summer and have fresh-from-the-garden peas, great, but frozen peas are super too. Peas, celery and chopped green scallions are folded into sour cream and then topped with the cashews and the bacon.

Dance through your summer garden and collect ingredients for this bright and tasty salad. Cucumbers and tomatoes are tossed with macaroni and dressed with a zippy blend of sour cream, milk, dill and vinegar.

Pickles seem to work wonders for this simple salad. Sweet pickles are mixed in with the peas and other salad ingredients, and pickle juice is mixed into the dressing.
