This quick and easy salad can be served as a side dish or a main course. I suggest serving it with sliced apple, sweet gherkins, or cornichons. Nice bread and a glass of white wine wouldn't hurt either!

Chicken Pasta Salad II

This is a super easy but wonderfully tasty salad recipe I picked up years ago which has become a summer tradition with my family! The ingredients and proportions are adjustable to personal preference. For added flavor, you can boil the pasta in a mixture of 1 part water and 1 part chicken broth.

Cucumbers and olives are tossed with cubes of Monterey Jack cheese and salad seasoning to make the base for this easy pasta salad. Add cooked pasta and toss with Italian dressing. Chill before serving to let the flavors meld.

Italian Confetti Pasta Salad

Tomatoes and basil, fresh from the garden, are tossed with olives, bell peppers, rotini pasta, then dressed with a creamy, piquant blend of mayonnaise, red wine vinegar and garlic. Let the salad chill overnight to bring out the snappy flavors.
