For the Kabobs:
1 (12 ounce) package
al fresco® Sweet Italian Chicken Sausage Fully Cooked, sliced on bias 1/2-inch thick
zucchini squash, sliced into 1/2-inch coins
red bell pepper, cut into 1-inch chunks
onion, cut into 1-inch chunks
Extra virgin olive oil cooking spray
For the Orzo Rice Pilaf:
white onion, chopped
white mushrooms, sliced
whole grain brown rice
1 1/3 cups
low-fat low-sodium chicken broth
chopped fresh parsley
ground black pepper
orzo pasta, cooked according to package instructions
lightly toasted almonds, sliced*
This is delicious!! Didn't try the rice dish but the Al Fresco sausage was awesome (and I substituted the onions for green peppers for the skewers.) The peppers in the sausage really brought the flavors all together; I've already made this twice, definitely a keeper!!
