Candied Lemon Peel

This is a good way to use up lemon rind and it goes good with coffee or on cake. It really does taste like candy, and you can do this to ANY citrus fruit. If you use oranges you can add brandy, cloves or other spices the mixture. Chop it up and put it in cookies, or just eat it by itself.

Lemon Orange Filling

This is a creamy citrus filling. If you want a stronger flavor, use 1 tablespoon lemon juice, 3 tablespoons orange juice, and 1 teaspoon grated orange rind. 

Lemon Orange Frosting

Frosting for General Robert E. Lee Cake or use your own white or lemon cake recipes. Enough to cover the sides and top of a 4 - 9 inch layer cake. 

Lemon Cream

This frosting can be used on any yellow or white layer cake. It's very good even on a box mix.

First you make real lemon custard studded with bits of lemon zest. Then you whip up the meringue. Half the meringue gets folded into the filling, and the other half gets spooned on top of the pie.
