I have a husband who loves mashed potatoes but if you're like me, you get sick of all that peeling! So this recicpe is a godscend. Incredibly creamy & delicious. To lighten it up I used light butter, light sour cream & skim milk. Next time I think I'll cut the butter amount by a tbsp or two just for health's sake. Tasted so wonderful & they were so easy & done in minutes. Thanks so very much!
