Don't you just LOVE not having to peel potatos? This recipe is yummy! Hubby bangs the table for these at least twice a week.
For variation,i smash,peel and mince a couple cloves of garlic,then roast them in the oven a few minutes or saute them in a fry pan with a wee bit of extra virgin olive oil. Then simply mash into the potatos! Yum!!
