This is a good solid meringue recipe. the cookies are light, but really sweet.

Nice and easy meringue recipe. For a change, I did half vanilla extract and half mint. I omitted the salt and nuts due to personal prefernce. Great taste with the mini choc chips! Tastes similar to a peppermint patty. Very light and airy.
