very easy no beating forever! My daughter thought their was coconut in it--the bean casing was a little chewy. When I make it next time, I will puree the beans in the food processor. Definitely a keeper!!!!

My son loves fudge, so I was looking for a healthier recipe and found this one. Intrigued, I gave it a try. It is so DELICIOUS! Very creamy, smooth, and chocolatey I only had 7 cups of powdered sugar, but it still came out fine. It is difficult to mix together by hand though, so I recommend using an electric mixer. At first, it's dry and crumbly, but after awhile it comes together very nicely. I can't understand why the other reviewer had trouble getting it to set up. Perhaps she didn't refrigerate it? As for me, I will definitely use this recipe again and again. It's a keeper!

well, lucky for me i thought "confectioners" sugar meant regular sugar! (as not so much a dessert maker) i used five cups of regular sugar and this recipe turned out AMAZING. i made it at my parents house, and had to have them sample it- they both *loved* it. i didn't tell them til after about the pinto beans ;) another slight change i made was using about 3/8 cup butter and 1/4 cup olive oil.

I was very excited to finally see a recipe for "bean fudge" in the database. (I had searched about a year ago to no avail.) Unfortunately, this recipe did not turn out well for me. With the recommended amount of powdered sugar, the recipe still didn't "set," and my husband suggested that perhaps I should use it as icing. The family also agreed that it was too sweet, so adding more sugar to stiffen it wouldn't have worked either. Don't know how I would rescue this recipe, but as it is, it's not a keeper.
