This is a wonderful way to add elegance and flavor to spinach. The warm goat cheese melts in your mouth and nicely accents the balsamic vinegar.

This salad is so easy to make you won't believe how good it tastes! I usually serve it with sandwiches and an ice-cold drink for a light, warm-weather meal. The soft, crisp green of the cucumber complements the brilliant whites and reds of the radishes, making a very pretty, creamy salad.

This is a great salad for the summer heat. It is light and very quick to make. And even my kids like it. Serve with French bread for a great combination.

This recipe started out as a summer salad with raspberries. I came up with this holiday version when I was putting together the menu for my first Thanksgiving dinner. I sometimes serve it on individual salad plates instead of in a big bowl.

I'm always looking for ways to spice up salads. This one is a cross between two of our favorites. I usually make a double batch of the dressing and use leftovers for dipping bread. -Amber Kimmich of Powhatan, Virginia
