This soup is awesome! I manage a senior apartment community & we had a "Soup"er Bowl party. I made this soup and it was the only one, out of about a dozen types of soups that was completely gone at the end of the event! The only change I made was to use kale instead of spinach. It had great flavor! My husband was disappointed, as he was counting on leftovers for dinner. I have made it several times since then and he eats several bowls at a time! Thanks for a great recipe!!

I did not like this at all. I followed the recipe as written.. My boyfriend said it was ok and he usually loves the food I make. I see the recipe got rave reviews but we just did not care for it.

I made this soup and everyone LOVED it! My mother-in-law took some to work; her employees said it smelled wonderful, so she gave each person a sample. They all lined up with their plastic spoons and got a taste, then they begged for the recipe! Zuppa Toscana is my favorite at the popular restaurant, so now I can have it anytime at home! I make a few changes to the recipe. I use kale instead of spinach. Kale doesn't get mushy like spinach does, and it brings an irreplaceable freshness and crunch to the soup. The first time I made it, there was an excess of sausage, so either add more vegetables, or cut back on the meat by 1/4-1/2, depending on your personal taste. Finally, Hubby likes the bacon crumbled and I agree; square cut bacon detracts from the rustic feel of the soup. Otherwise, it's fabulous as is! Another tip: if you have those small packages of red pepper flakes from your last pizza night, 1 1/2 packages are the perfect amount for the zuppa. You'll see: people will be asking you for the recipe, too! Homemade soup, salad, and breadsticks, here we come!

AMAZING!!!! Just like the retaurant. Definitely substitue Kale for the spinach though. It is also good the second and third day as leftovers...not that there will be any left.

Ok, I've made this twice in one week, and this time I made a double batch. I suppose it's not the HEALTHIEST thing for us to be eating this much of, but that should tell you why I gave it 5 stars. I made it just as the recipe said, except I left out the greens (personal taste). Also, I served it with grated parm on top, and that added a lot to the flavor. Thanks for the recipe!

I love this soup (and so do my husband and toddler.) My only issue is the amount of fat and cholesterol. I will probably take the suggestion of another reviewer and use turkey sausage next time.

Wow...this was delicious..I always have this when I am at Olive Garden and this soup taste just like the real deal. I will make this soup again..oh my the way..I added kale instead of spinach and used 1/2 tsp of red pepper it was more than spicy..next time I will not add as much pepper.

Delicious! My husband absolutely loved this soup! I ran out of chicken broth so, I substituted a bit of wine instead--it really added to the flavors. Thank you for the recipe--it's fabulous!

DELICIOUS IS RIGHT!! tastes just like Olive Garden. i did substitute the greens for Kale. Yum Yum. Boyfriend loved it to. we took it for lunch the next day and it heated up nicely ;)

This was a delicious soup. I did make the mistake of following another reviewer's suggestion to add more fennel, and the flavor really overpowered the soup. My mistake, not the recipe. I do not recommend adding spices until you taste the soup first and then adjust to your taste.

Wow! This is the best soup recipe that I have ever made, and my family definitely agrees! I also sautéed a bunch of sliced mushrooms with white wine and added this at the same time as the browned sausage. This will be a regular of ours from now on.... it was even better than the famous restaurant version!

My husband loved this soup and he is NOT a soup person. We both feel that it is better than the OG version. HOWEVER, it's a bit salty. I think that all the canned chicken broth is the culprit (I even used low salt/sodium). Next time I make this I think I'll go half and half on the broth/water. Otherwise, WONDERFUL!

This is a wonderful recipe!! I've never had the soup at a restaurant, so I guess I don't have anything to compare it to. However, having made quite a few soups myself, this one is by far the tastiest, heartiest soup I've had yet. I was worried at the lack of seasonings in the recipe, but the bacon and sausage went a long way toward giving the soup a lot of flavor. The only thing I did differently was to add kale instead of spinach (my hubby ate all my spinach the night before). I will definitely make this often!
