I made this soup and everyone LOVED it! My mother-in-law took some to work; her employees said it smelled wonderful, so she gave each person a sample. They all lined up with their plastic spoons and got a taste, then they begged for the recipe! Zuppa Toscana is my favorite at the popular restaurant, so now I can have it anytime at home! I make a few changes to the recipe. I use kale instead of spinach. Kale doesn't get mushy like spinach does, and it brings an irreplaceable freshness and crunch to the soup. The first time I made it, there was an excess of sausage, so either add more vegetables, or cut back on the meat by 1/4-1/2, depending on your personal taste. Finally, Hubby likes the bacon crumbled and I agree; square cut bacon detracts from the rustic feel of the soup. Otherwise, it's fabulous as is! Another tip: if you have those small packages of red pepper flakes from your last pizza night, 1 1/2 packages are the perfect amount for the zuppa. You'll see: people will be asking you for the recipe, too! Homemade soup, salad, and breadsticks, here we come!
