We subsitute kale for spinach because kale stales a little crunchier. A great recipe that we make quite frequently.

I make this often. I always double the recipe. I also use 1 pound of spicy italian sausage and 1 pound of sweet italian sausage. This is a perfect copy-cat recipe!

Perfect name! This soup is delicious! I even took some to the neighbor because I was so impressed with the outcome. My husband loved it and asked me to save the recipe. We doubled the batch and put a bunch in the freezer for those cold winter nights!

We love this soup! It is easy to make and it reheats great too. It also goes great with some french bread. I like to dip the bread in the broth.

A very nice soup! One thing I did differently - this soup was too runny for me. So, I added cornstarch to thicken it up. It was amazing!

I made this tonight and it was so tasty! It was almost identical to the restaurant version. My only caveat is to make sure you do not overboil the potatoes because they will begin to fall apart on you. I also made a smaller amount, so I used a half cup of heavy cream which was plenty. I also used kale instead of spinach.

I thought this tasted exactly like the OG version, which I like, so I really liked this. I did use kale instead of spinach, milk with cornstarch instead of cream, and hot instead of mild sausage. I kept a sprinkle of red pepper flakes and didn't find the result too hot. In fact, next time I'll add more red pepper. I also tossed in some fennel per another review. My only complaint is that I found this too thick. I'm not sure what other people did to make it too thin, but next time I'll add a little extra broth or something to thin it out. Regardless, I give it 5 stars for tasting like what I expected. The things I'd like to fix will be easy enough to fix next time. Thanks!

We love it!! Maybe a bit spicy, so we've cut the pepper flakes to 1/4 teaspoon. Great way to ear fresh spinach and we pile it on the plate before pouring the soup so it begins to wilt when you eat it. Great recipe!!!

This soup is really good but there is a FANTASTIC recipe for baked potato soup on this site that has the same consistency. I think next time I will use the baked potato soup recipe and just add in the sausage and spinach. The ultimate comfort soup!

Different but delicious soup! I added zucchini because I had it. I did chop the potatoes and used frozen spinach. I also added fresh oregano, thyme and basil from my garden. I finished with Parm Reggiano and it was delicious.

Excellent flavor soup! I preferred to chop the potatoes, instead of slice, and chop the spinach before adding. And to make it healthier, I used Italian turkey sausage and omitted all but one slice of the bacon. And, my family doesn't like spicy things, so I only used 1/2 of the red pepper at first. However, I did add the whole amount called for, after tasting, and it was not too spicy, even for us. Also, it has a very thin broth. I would of preferred it a little thicker. But, with the good flavor like it has, we really enjoyed it anyway. I will definitely make over and over.. just with our preferences, to be healthier.

I love this soup. This recipe is very simple to make and was a huge hit. You can fiddle with ingredients and it will still be tasty. I did use kale instead of spinach since I have never seen it served with spinach and I left out the bacon as well. I had it in a restaurant without bacon and thought it was better plus it is healthier. I do not eat pork so I did use turkey sausage. No one noticed. lol

5+++. used hot italian sausage, no crushed peppers, drain sausage well!!! Cook and crumble bacon. 5-6 small white potatoes. Only had to boil potatoes 10-15 minutes, 1 t fennel seeds.
