Amazing recipe. A few changes I made: I did not add bacon, used less potatoes (4), used fat free half and half, and added kale at the end. Since I didn't use bacon, after I drained the meat I just added the rest of the ingredients to the pot in the order given. Perfect!

I followed the recipe, but didn't end up with very much liquid for the soup part. It was starting to boil away while cooking the potatoes. Over all, was pretty tasty, I used mild italian sausage, just way too much fennel for me.

It's been raining for over a week here and the weather is cooling off. Surprised my wife with this recipe and she loved it. She's taking some for leftovers to work tomorrow and said she's can't wait. Very very good and easy to make. As a tip I just put some of the spinach in the bottom of the bowl and then poured the soup on top. Within a minute the spinach was slightly wilted and good to go.

The BEST Zuppa Toscana!!! My whole family absolutely enjoyed this! I made it exactly as written, I can't imagine changing a thing. Some reviews suggested using kale instead of spinach but, OMG... it was perfect. It was a little spicy although all ages loved this soup from 3yrs old to 19. Thank you for sharing this wonderful recipe!! Oh yeah, I almost forgot.. I made the parmesan knots from this site to go with it and it was a perfect combination.

I have had this in my Wish list for a long while. i finally made it and boy oh boy was it good! The family wasn't as crazy about it as I was but I am the one writing the review so I say 5 stars! I doubled the recipe and used mustard greens instead of spinach b/c I found a bag of it for .99, I also used 2 boxes of a gratin potatoes w/ the seasoning and used those in place of the fresh potatoes. I loved this soup! Thank You Souporsweets!

This is a great soup! If you love potato soup, I definitely recommend this one. I omitted the red pepper flakes (little mouths over here). And I used spinach, which was okay the first night, but not so good when it was reheated. I really vacillated about using kale, but next time I will for sure. Oh, and I would recommend peeling the potatoes (just in case you're like me and skip this step when you can). I used a mix of russets (peeled) and reds (unpeeled) and found that the red potato skins were an annoying distraction in the soup. We served this up with plenty of freshly cracked black pepper for that added zip.

Excellent! I've used other zuppa toscana recipes, but this is my favorite. Using kale is a must, in my opinion. I completely forgot to add the red pepper flakes, it still tastes great. The only problem I run across with this soup is the potatoes falling apart. I may try slicing them a little thicker next time.

This is incredible.. I made this with a few changes.. I used Kale instead of spinach.. I used fat free half&half instead of cream.. I used 5 small red potatoes, and cut down on the red pepper since we dont like it too spicy.. But overall this was great! I also topped with some fresh grated reggiano cheese... Absolutely fab!

This soup is wonderful! During the unfortunate times that I am dragged kicking and screaming to the odious faux Italian chain to which so many of the reviews here refer, this is the ONLY thing that I will eat. It's actually quite tasty. The best part about making this soup at home is serving it with crusty bread rather than the oil & salt saturated dough they call breadsticks. I went ahead and used the spinach the first time, but will use kale in the future. I drained and rinsed the sausage, used red new potatoes, and substituted fat free half & half for the heavy cream. Great rainy day meal, especially with some red wine.

Oh my goodness. This recipe is amazing and so much like that famous restaurant's soup. I did adjust a few things for my family's tastes. I omitted the red pepper flakes. I used Italian sausages instead of bulk sausages -- love the pieces instead of crumbles. Also, using kale instead of spinach is a MUST. Kale just makes this soup, IMHO.

Definitely oh-so-good. I followed the recipe exact, only adding a tsp. of crushed fennel as another reviewer recommended. My family was not a fan but I am for sure. I'm really glad I didn't double it because it makes quite a bit for one person. Make sure you invite your besties over to share if you make this. Quite simple and not intimidating like I originally thought it would be. NOTE: If you have kids, you might want to cut back on the red pepper flakes. It's got a bit of a kick, which could be a bit much for little mouths. Also, my potatoes were done at 12 minutes.

This was amazing! I made this with homemade bread bowls and my husband loved it. I think that next time I will use less sausage though because 1 lb was too much for us. I also used kale instead of spinach and added it earlier. I think that next time I will cook the bacon in the microwave and use milk instead of cream to make it healthier. I love when we can make restaurant meals at home!

Awesome! Really easy and delicious. I used Kale instead of Spinach and put that in at the same time as the potatoes. Use hot sausage instead of mild and then you can omit the extra ingredient of red pepper flakes. I also used low-fat milk in the place of cream. Perfect!
