This is Super-Delicious! I made as written minus the red pepper flake, while adding more garlic. I served with freshly grated parmesan cheese, and some fresh basil as well.. My husband said this was "special" lol! New family favorite...

Turned out really good for the first cool New England day of the year. I used turkey sausage, browned it with bit of EVOO, onion, green pepper, celery, garlic and red pepper flakes. Added the chicken stock, 6 cubed red potatoes with the skin on and a whole bunch of chopped kale (no stems). Brought to a boil and then added the bacon and simmered for an hour. Finished it off with a cup of light cream. Served it with the roasted garlic bread on this site. Hubby thought it was fantabulous!

My DH and I really liked this recipe,kids not so much(what else is new?????) I did not have bacon and I used a package of chicken sausage.I only used two potatoes as that was all I had but I think I will still not use as many as the recipe calls for the next time I make it,I did want more potato but I think six would be too much for me.I also want to try kale next time too.This will definetly go into my rotation.

This was very good...quick and easy...the only change I made was I used hot italian sausage and left out the pepper flakes...it had the perfect amount of heat.

LOVED this recipe! Taste just like the stuff you get at Olive Garden but better cause it's homemade! I didn't have bacon on hand, but I do think it would have added a nice extra depth of flavor, so don't skimp if you don't have to! I also used spicey italian sausage out of personal preference, as well as kale instead of spinach and it was amazing!

delicious!! ~ although the recipe as is lacks a little flavor, so I changed the recipe a little bit - lots of garlic, some fresh spices - thyme, bay leaf and a little oregano , to cut the fat a little bit I used turkey sausage (not ground just cut into 1/4 slices)and only added about a half a cup of the heavy cream - next time I'm going to try using kale instead of the spinach :)

We love this soup and it is so easy! I drained the Italian sausage in a colander for at least 30 minutes to eliminate a lot of the fat and used fewer red pepper flakes. I used chopped kale instead of spinach. I like the texture that the kale provides. Will make this many, many more times. Tastes exactly like the restaurant version.

This is a really tasty soup as written. I omitted the cream to lower the calories and fat. Next time I will omit the bacon and use low sodium broth to better make it fit our diets. This is worth every calorie and fat gram as written. I am making the changes so that we can enjoy this soup as regular part of our diet. It is that good.

This is absolutely delicious!! Leftovers won't last long when you make this soup! I forgot to get bacon so I had to do without. It was still delicious, not as heavy with it. Also I used a couple cups of frozen spinach instead of kale. My husband devoured it, it's his new favorite soup. My 6 year old ate her entire bowl and wanted seconds. I love this! Best of all it's so easy to throw together, from start to finish it took maybe 30 40 minutes to make. It tasted like I had been cooking all day.

Absolutely amazing soup! We didn't use a dutch oven but a toaster oven. When it came down to putting the ingredients together, it was over the stove top. This soup is up there with Olive Gardens toscana soup!

Amazing recipe. A few changes I made: I did not add bacon, used less potatoes (4), used fat free half and half, and added kale at the end. Since I didn't use bacon, after I drained the meat I just added the rest of the ingredients to the pot in the order given. Perfect!

I followed the recipe, but didn't end up with very much liquid for the soup part. It was starting to boil away while cooking the potatoes. Over all, was pretty tasty, I used mild italian sausage, just way too much fennel for me.
