"this is so good, this is so good" is all i heard when i served this soup. it has now fallen in the catagory of our top three soups!!! we have never had the zuppa from o.garden. so had nothine to compare it to but oh my goodness this soup was amazing. i did add extra garlic and onion of course, and used kale instead of spin. used 3 small russets i did slice them but i think next time i will cube they didnt hold up that well in the cooking process. it is so good. just the right amount of spice. thanks for the keeper.

I loved this the way I made it. I omitted the onions and spinach (I don't like either). I didn't have any bacon either, but without these ingredients it was still excellent. I used red potatoes with the skin on. Very yummy. Next time I will use bacon.

It was awesome! I took the advice and used kale instead of spinach and was happy with it. I used crushed up chiltipin peppers from the garden for my red pepper flakes which are SUPER spicy. Yummy!

This was brothier and a little less creamy than I was hoping for. Also, I would probably use on about 3/4 lb sausage next time, as it was a little overwhelming. Otherwise, it was good.

This is my favorite soup at Olive Garden but I seriously think my homemade one tasted better! It was delicious. I substituted kale for the spinach and it was perfect!

i have made this a bunch of times. Fab Soup. I do soak the potato slices in water while i am prepping everything else. The potatoes will stiffen and hold their shape after cooking. Makes for a better looking soup.

"Better than Oliver's Garden!" said my mother. It was really tasty. I cut back on calories with half and half and it was still perfect. Can see myself making this many more times.

This was WONDERFUL. I tweaked it just a tiny bit. Instead of the 4 slices of bacon I used a couple tablespoons of the pre cooked bacon pieces and threw them into the sausage when it was nearly browned. Got the flavor without the fat. And instead of the cream I used a can of low fat evaporated milk mixed with a couple tablespoons of cornstarch. That gives you a little more feel of the cream without the fat also. And I used kale instead of spinach. Loved it! and so did hubby. I'll be begged to make this again and again.

I made this pretty much as written. I didn't use canned broth so I sort of guessed how much to use; and some of the other measurements I probably changed. Overall this was a very tasty soup, but I wish it had been thicker. I might try and modify the method to include a flour/oil roux as a thickener, or maybe just use some cornstarch next time. Thanks for the recipe, we really enjoyed it, especially as a way to use use up spinach that has seen crisper days!

This is Super-Delicious! I made as written minus the red pepper flake, while adding more garlic. I served with freshly grated parmesan cheese, and some fresh basil as well.. My husband said this was "special" lol! New family favorite...

Turned out really good for the first cool New England day of the year. I used turkey sausage, browned it with bit of EVOO, onion, green pepper, celery, garlic and red pepper flakes. Added the chicken stock, 6 cubed red potatoes with the skin on and a whole bunch of chopped kale (no stems). Brought to a boil and then added the bacon and simmered for an hour. Finished it off with a cup of light cream. Served it with the roasted garlic bread on this site. Hubby thought it was fantabulous!

My DH and I really liked this recipe,kids not so much(what else is new?????) I did not have bacon and I used a package of chicken sausage.I only used two potatoes as that was all I had but I think I will still not use as many as the recipe calls for the next time I make it,I did want more potato but I think six would be too much for me.I also want to try kale next time too.This will definetly go into my rotation.
