This is delicious and BETTER than the restaurants because you can load it up with all the goodies. I use Kale instead of spinach. Kale stays some what crunchy in the soup which I like. Everyone I have made this for just goes crazy for it.

I make this recipe at home (using kale) and my family simply loves it! A nice bowl of zuppa and a breadstick and it's just about the perfect meal!

We love this soup and make it often. My changes are to use spicy turkey sausage, low sodium broth, more potatoes, and lots of kale for better texture and more body. The creamy, spicy, comfort feel of this soup is great on cold and rainy days. Or week nights when you have little time to cook.

Very good mix of ingredients. We do not like Italian sausage, so I used sliced, spicy smoked sausage sauteed until browned. I omitted the bacon since the sausage was smoked. I also added quite a bit more spinach but stuck pretty close to the rest of the ingredients. It was a hit but next time, I'll use a bit less sausage and add more potatoes and even more spinach.

Wonderful recipe! My changes: left out bacon, used half and half rather than cream, used kale rather than spinach (and a lot of it!!), used fat free chicken broth and added a little salt. Very good!

i used a mixture of mild and hot italian sausage with kale with this recipe. i also used half and half for the heavy cream but added freshly grated parmesan at the end. the kids didn't even bat their eyelashes with the "monster greens" addition.

Delicious and I used a "quick" version. I used pre-cooked Johnsville Italian sausage links -- just sliced them. I was in a hurry, so I used onion powder and garlic salt in place of onions and garlic. I sliced red potatoes and left the skins on. Next time I will use less of the red pepper flakes as it was too spicy for some peoples' taste.

YUM. This was wonderful. I used Spicy sausage from my local butcher, frozen spinach and ham cubes. I was out of a few of the ingredients. I can see that the quality of your sausage would be very important in this recipe. This was perfect.

Great soup. Used kale instead of spinach and I thought it was a little too hot so might cut the pepper flakes in half next time I make it and I will make it again. It really did taste like the soup in the Italian Restaurant.

This soup had incredible flavor. I was so impressed. I did like it much better than the Olive Garden verson. I also used part chicken broth and part bouillon. Worked beautifully. I also used frozen chopped spinach because I had no fresh on hand. Had it as leftovers today and is even better than the night before!

This recipe is so easy, forgiving, and delicious! I substituted bouillon cubes for broth and milk for cream since it was what I had at the time. I also didn't have spinach so I used collards (it is what I had on hand). I finely chopped spicy sausages since I didn't have it ground. The soup was delicious. Served it with homemade bread and some wine - a perfect meal. My husband and guests loved it - the guests wanted the recipe.

This soup tastes so much better than it looks! I've made it several times and it's always delish! Sometimes I use spinach and other times I use kale and it is great both ways. I've also tried it with heavy cream and fat free half and half with equally excellent results. You can't go wrong with this one!

I made this recipe, as is, and it tastes just like the Zuppa Toscana at the Olive Garden. I used to work at the OG, and I believe they use kale instead of spinach, though. Either way, this is a super easy and delicious recipe. I recommend to everyone, and I'll be using it again.
