This soup is really good but there is a FANTASTIC recipe for baked potato soup on this site that has the same consistency. I think next time I will use the baked potato soup recipe and just add in the sausage and spinach. The ultimate comfort soup!

Different but delicious soup! I added zucchini because I had it. I did chop the potatoes and used frozen spinach. I also added fresh oregano, thyme and basil from my garden. I finished with Parm Reggiano and it was delicious.

Excellent flavor soup! I preferred to chop the potatoes, instead of slice, and chop the spinach before adding. And to make it healthier, I used Italian turkey sausage and omitted all but one slice of the bacon. And, my family doesn't like spicy things, so I only used 1/2 of the red pepper at first. However, I did add the whole amount called for, after tasting, and it was not too spicy, even for us. Also, it has a very thin broth. I would of preferred it a little thicker. But, with the good flavor like it has, we really enjoyed it anyway. I will definitely make over and over.. just with our preferences, to be healthier.

I love this soup. This recipe is very simple to make and was a huge hit. You can fiddle with ingredients and it will still be tasty. I did use kale instead of spinach since I have never seen it served with spinach and I left out the bacon as well. I had it in a restaurant without bacon and thought it was better plus it is healthier. I do not eat pork so I did use turkey sausage. No one noticed. lol

Today was too hot for soup, so I left out the broth and made it a creamy potato/sausage dish. YUM! We will be making this again!

The title says it all. This was just super delicious and just like the restaurant. I made a few changes to suit our taste. I only added one crushed dried red chili pepper so it's not that spicy for the kids. I also used kale, as that's what the restaurant uses. My whole family loved it. Even my 5 year old son whom I could not get to eat soup at all, had seconds. A family favorite.

My family loves this recipe. I took it to our family Easter dinner and everyone had to tell me how good it was! It was the perfect dish for a rainy day. The red pepper really makes it great. I also used turkey italian sausage that time, but it tasted the same as when I make it with pork italian sausage. No one even noticed!! My mom made the recipe with polish sausage and it tasted just as great. Thank you soo much for this recipe!

Definitely a five star recipe! I used hot sausage and no red pepper flakes, half and half instead of the heavy cream and kale instead of the spinach. I LOVE this soup! Will be making many, many times.

OMG! This soup is soooo delicious. My husband and I ate it for dinner and then again for breakfast. He told me it was restaurant quality... but I think it was better. The only change I made per everyone Else's recommendation was to sub kale for the spinach. I will definitely make this soup again and again! Thanks so much!

This soup is awesome! I manage a senior apartment community & we had a "Soup"er Bowl party. I made this soup and it was the only one, out of about a dozen types of soups that was completely gone at the end of the event! The only change I made was to use kale instead of spinach. It had great flavor! My husband was disappointed, as he was counting on leftovers for dinner. I have made it several times since then and he eats several bowls at a time! Thanks for a great recipe!!

Wonderful flavor. Even better with Hot Italian Sausage, especially if you like a bit of kick to the soup. also added some very thinly sliced carrots for a bit of color.
