Very easy, packs a lot of flavor. Everyone in my family enjoyed this soup. It was a nice treat on a crisp fall night. I pretty much followed the recipe (subbed turkey sausage for the pork) and I thought the measurements and ingredients were pretty spot on. It is an easy soup though to add or subtract things you don't like. This will be on our winter soup rotation for sure!

We loved this soup! Thank you for a wonderful recipe; simple and yet delicious. I did not have heavy cream, but sour cream worked perfectly. And while there was no cheese in the recipe, we couldn't resist the addition of some shredded pepper jack and cheddar. Will be making this soup again for sure!

best soup on the planet! I use a whole pack of bacon, and collards greens instead of kale or spinach. Plus don't forget to add salt and pepper to taste!

This was a great recipe. I was nervous because this soup is the reason I go to Olive Garden and I thought it would be hard to duplicate but it wasn't. As suggested in previous reviews I skipped the red pepper flakes and used Kale instead of Spinach. This soup will be in heavy rotation at my house.

I made this to get rid of some Italian sausage in the freezer. It looked just like the famous restaurant’s version, but for some reason, it tasted nothing like it. The only changes I really made (other than using kale like the restaurant does) were to use turkey bacon and low sodium chicken broth; could this have been my problem? The soup didn’t taste bad, but it didn’t taste like the restaurant version, either. Hmm, might have been my fault… Well, anyway, I probably won’t make this again since I rarely buy Italian sausage as hubby is not a fan. Thanks anyway! :) UPDATE: I tried the soup after a night in the fridge and BOY, WHAT A DIFFERENCE!! I think the flavors from the sausage needed to mix with the broth; that’s what was missing from the taste. Now, the soup tastes GREAT and VERY close to the famous restaurant’s version! I most certainly will make this again, but I will let in sit in the fridge a day or two before serving—the difference is amazing. Thanks for a great recipe!

Delicious! Used Kale rather than spinach and a little extra red pepper and I thought it was better than the one Olive Garden serves. BF loved it, I loved it with some extra hot sauce. yummy, and really is perfect for a hot day.

Yum... I love having this soup at one of our favorite restaurants "The Olive Garden" I used Kale instead of spinach and Hot Italian Sausages which I baked in the oven, diced and rinsed well to remove all the grease, otherwise it turns your cream orange. So good! :)

I've been sick and asked my daughter to make this for the family. She has followed a recipe only one other time with more than 4 ingredients. AWESOME! The soup was awesome. Since I didn't want to waste the other part of the fresh spinach, I asked her to put the whole bunch in. It was not overwhelming. This is delicious and I would serve it to my guests at a dinner party. A KEEPER

This soup was really good. I used kale like many other users did. I also used red potatoes instead of russets, because I wanted them to hold their shape a little better after they were sliced and cooked. Great flavor, a little spicy and really tasted like that popular chain restaurant's soup.

Very good. Doubled the recipe since last time I made it it was gone instantly! Used a very big bunch of Kale instead of Spinach. Added it at the same time as the potatoes. I also used Zesty Sausage. Added a nice spicy taste to it without having to put in red pepper flakes.

"this is so good, this is so good" is all i heard when i served this soup. it has now fallen in the catagory of our top three soups!!! we have never had the zuppa from o.garden. so had nothine to compare it to but oh my goodness this soup was amazing. i did add extra garlic and onion of course, and used kale instead of spin. used 3 small russets i did slice them but i think next time i will cube they didnt hold up that well in the cooking process. it is so good. just the right amount of spice. thanks for the keeper.
