Sunshine State Salad

“My husband and I retired from central Illinois to Florida over 13 years ago. Several times, a friend gave us grapefruit from his backyard tree. One day I was going to make a lemon pineapple gelatin salad and discovered I didn't have pineapple. So, I cut up a fresh grapefruit and used it in the salad. It was good, and I tried adding other fruits until I came up with this recipe.”

This was easy and tasty. The grapefruit was a wee bit harsh for some who don't appreciate the fruit, but I enjoyed it. I was asked for the recipe. There is a can of pinapple/grapefruit, etc. out now that may also be used if you are wanting to simplfy more.

I made this for an Academy Awards party, and called it, "Little Miss Sunshine Salad." So good and so easy to make! I'm allergic to apples, so I substituted with a can of mandrin oranges! Yummy!
