Original Recipe Yield 3 dozen
 

Ingredients

  • 1 cup butter
  • 1 1/2 cups white sugar
  • 1 egg
  • 2 tablespoons vanilla extract
  • 1 (20 ounce) can crushed pineapple, with juice
  • 1/2 cup chopped pecans
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda

Directions

  1. Cream together butter or margarine, sugar, egg, and vanilla.
  2. Add crushed pineapple with juice and chopped pecans. Sift together flour with salt, nutmeg and baking soda.
  3. Drop by tablespoonfuls (if there is any left at this point) onto greased cookie sheet 2 1/2 inches apart. Bake at 350 degrees F (175 degrees C) 10-15 minutes or until lightly golden brown. Cool.
