Sunday Chicken Supper

INGREDIENTS

  • 4 medium carrots, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 1 celery rib, cut into 2 inch pieces
  • 2 cups fresh green beans (2-inch pieces)
  • 5 small red potatoes, quartered
  • 1 (3 pound) broiler/fryer chicken cut up
  • 4 bacon strips, cooked and crumbled
  • 1 1/2 cups hot water
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1 pinch pepper

DIRECTIONS

  1. In a 5-qt. slow cooker, layer the first seven ingredients in order listed.
  2. In a bowl, combine the remaining ingredients; pour over the top. Do not stir. Cover and cook on low for 6-8 hours or until vegetables are tender and chicken juices run clear.
  3. Remove chicken and vegetables. Thicken juices for gravy if desired.

I also have no idea why I followed the suggestion to use a ranch dressing marinade, it turned out really gross looking. Tasted good though. I'd give it a 3 based on how it tasted, but bumped it up to 4 since the recipe didn't call for the marinade.

I'm not sure why I followed a suggestion to marinate in ranch dressing as it wasn't necessary and it left a curdled look to the broth, so I wouldn't advise that. I used 2 cans chicken broth in place of the water and bouillon and added 1/2 tsp. poultry seasoning and it was very tasty. It gets 5 stars because the original recipe did not call for ranch dressing and I think it is very good as written.

This recipe was awsome. Instead of using 3 cups water, I used 2 cups water and 1 cup white wine. I made this for my fathers birthday and everyone raved about it.
