This is quick,easy and very tasty! The only changes I made were to add some pepper,thyme and combination of yellow and zucchini. I may zip up a bit more next time I make it. Looks like we may sufficient squash product from our garden this year. Great vegetarian meal.

Very good casserole. I gave it a 4 because I used herb stuffing mix in place of croutons & added sharp cheddaer cheese along with the mozarella.

We didn't get too excited about this recipe. I am going to try this again; mix the cheese in with the mushroom soup, and instead of croutons I am going to top with a mixture of stove top stuffing tossed with butter, leaving uncovered so the 'topping' will crisp up nicely. Will probably only cook for about 40 minutes.

This was good I used all zucchini and omitted the carrot (did not have) I halved the recipe and added diced smoked sausage. Also I used cheddar instead of motz. Thanks

The flavor was pretty good, but the recipe was confusing. I assume you would drain the veggies after boiling...but how much of the veggies do you use? My zukes are enormous right now...so saying use 4 chopped is misleading. Should it be 4 cups? Do you put the soup mixture over the top or should it all be completely mixed together and then put into the casserole dish. It might have tasted better if the ingredients and directions were more exact.

Yum! I am not a summer squash fan and I made this recipe with it and everyone loved it. Will definetly make again. We accidently doubled the sour cream and it was even creamier!

So...a couple changes: First, I only used one and a half onions, no butter, and mixed half a cup of extra sharp cheddar into the soup mixture. Also used low fat soup and sour cream, and fat free croutons. Topped it with hazelnut meal, since that's what I had. Given this, the recipe is tasty. It's a little odd looking and tastes very comforting, nothing fancy enough for guests, but I would make it again--which is always the ultimate test.

I would have given it 5 stars but it was a little watery due to the boiling instead of steaming the vegetables. It was tasty though. I guess it would have to be tasty with all those rich ingredients. I would make it again but I will have to use the lower fat version. i feel way too guilty eating this dish. Just too fattening. my husband liked it but after hearing the rich ingredients he took only a tiny bit.

This is a terrific recipe! My husband loved it and so did I. It's a real keeper! I used 2 (8-inch) yellow summer squash and 2 (8-inch) zucchini and only 2 carrots (all I had). I also forgot to cover the casserole while it baked and the cheese made a nice toasted crust on top after 40 minutes. I rather liked it that way. Next time I'll try it the right way and see if I like it even better!

This was great! I took the advice of another and used herd stuffing instead of croutons. I drained excess water from the veggies before mixing together and put some stuffing on bottom of pan to soak up any extra water. Did not come out soggy and made great leftovers!

I've been making a similar recipe for about 30 years and for those of you that think this one may be a little bland, you might try it again using: Can of Cream of Chicken Soup and a package of Herb Stuffing (such as Pepperidge Farm)instead. of the croutons. The recipe I used had some of the stuffing mix on the bottom (which absorbs some of the liquid) and the rest of the stuffing mix on the top. Cheese then would be mixed with the veggies. Thank you so much for reminding me of this. Also,if you microwave the veggies with a little water or steam them, they won't be watery.
