Finally!. I have tried so many squash casserole recipes in an attempt to get my family to eat yellow squash. My kids wolfed this down; my husband took one bite and said " Whatever you did, do it exactly the same next time - don't change a thing".
In fact I did alter the recipe a little to make it low-carb - I used Splenda instead of sugar, and omitted the breadcrumb toppings and used a little extra cheese sprinkled across the top.
