This was allright. My fiance's brothers came to visit today (my fiance and I got a new doggie we wanted them to meet!). My fiance grilled brats / Italian sausages and I made two salads to serve on the side. This was one of the salads I prepared. I really wanted to make a fruit salad (i.e. strawberry pretzel, taffy apple, etc.), but because my fiance doesn't like fruit at all, I was stuck searching for something that he would eat. Unfortunately, most of the salads in my recipe box call for ingredients he hates lol! :) I must say, this was very quick and easy to prepare. To speed prep even further (totally not necessary tho...), I purchased a 32 oz. bag of frozen sweet corn. Instead of chopping tomatoes, I halved a pint of grape ones. I used a Vadila onion to add a little sweetness and DOUBLED the basil (I love the stuff!!!). NOTE: Be sure to s&p REALLY well. Properly seasoning is crucial, especially adding enough salt. Also note that 2 medium-sized ears of corn equal approximately 1 c. frozen. Had I known this beforehand, I wouldn't have splurged for the 32 oz. bag (and that may be the reason for this being bland). Overall, this was good, but nothing to write home about. Perhaps after sititng overnight this will taste better. I also think using a good quality balsamic or red wine vinegar would add more flavor. Thanks anyways, Eileen! :-)
