INGREDIENTS
2 cups biscuit/baking mix
1/4 cup sugar
1 teaspoon ground cinnamon
1 egg
1/2 cup applesauce
1/4 cup milk
2 tablespoons vegetable oil
TOPPING:
1/4 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter or margarine, melted

DIRECTIONS
In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar.

Very nice and the applesauce made them so moist. I have a baking mix that I make and keep on hand, so this recipe is perfect for using it. (I'd recommend using a mix you've made not a store bought one since most of them have trans fat in them and you can make your own without the bleached flours..keep your family healthy)(My baking mix is: 5 c. flour, 1/4 c. baking powder, 2 tbs sugar, 1 tsp salt. Keep in an airtight container. Cut 1 TBS butter for each 2 cups mixture before adding to the rest of the recipe) I agree with a previous post, the cinnamon/sugar on top is a must to keep the sweetness. It's not overly sweet, which is a plus because there are a lot of too-sweet recipes out there. I do prefer it a touch sweeter, I think next time I'll do a layer of the cinnamon/sugar in the middle of the muffins. I will absolutely use this again. As I write this I keep going back for another bite!

these were very good and simple. the only change i made was, i sprinkled raw sugar on top before baking them, so they would have a nice crunch on top. instead dipping them in butter then sugar after they were baked

Fast and good with limited ingredients. Just what I needed today. I substituted egg nog for the milk and it was tasty. *I only managed to fill 9/12 of my silicone muffin cups - our family could have used a couple more.

I can't stop eating them... I don't usually write reviews, but these muffins are so good, I had to. Baking is therapy for me, so I wanted to try something healthier for my body's sake. I was worried they'd be dry or something but they aren't! The sugar on top made them just perfect!

I didn't have baking mix, so I used 2 c. flour, 2 tsp. baking powder and 1/4 tsp. of salt. I made 24 mini muffins, baked at 400 for 10 min. I upped the sugar to 1/3 c. because I wasn't planning on topping with cinnamon sugar, but then I tried one and it really had no flavor. They definitely need the topping to be good. So for flavor I would only give 3 stars, but for ease, speed of prep and baking, and use of common pantry staples I would give 5 stars, so that averages out to 4.

Made this this morning, in a hurry. They went together so quickly and were so easy to make! Picky son loved them, I thought they were very moist. Definitely a keeper, will make again.

They'r wonderful! Super easy to make,and great on-hand ingredients. I added a tsp of cloves the second time i made them...and that was yummy as well. Thanks for the great recipe!!!
