Sugar-Topped Applesauce Muffins

Ingredients

  • 2 cups biscuit/baking mix
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/2 cup applesauce
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • TOPPING:
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter or margarine, melted

Directions

  1. In a bowl, combine the biscuit mix, sugar and cinnamon. In another bowl, beat the egg, applesauce, milk and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400 degrees F for 10-12 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. In a small bowl, combine sugar and cinnamon. Dip muffin tops in melted butter, then in cinnamon-sugar.
