INGREDIENTS
1/4 cup old-fashioned oats
1/4 cup orange juice
1 egg
1/4 cup canola oil
3/4 cup all-purpose flour
5 tablespoons sugar, divided
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/2 cup fresh blueberries or thawed frozen unsweetened blueberries
1/8 teaspoon ground cinnamon

DIRECTIONS
In a small bowl, combine the oats and orange juice; let stand for 5 minutes. Stir in egg and oil until blended. Combine the flour, 1/4 cup sugar, baking powder, salt and baking soda; stir into oat mixture just until moistened. Fold in blueberries.
Coat muffin cups with nonstick cooking spray or use paper liners; fill two-thirds full with batter. Combine cinnamon and remaining sugar; sprinkle over batter. Bake at 400 degrees F for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
FOOTNOTES
If using frozen blueberries, do not thaw before adding to batter.
Nutritional Analysis: 1 muffin equals 216 calories, 11 g fat (1 g saturated fat), 35 mg cholesterol, 170 mg sodium, 27 g carbohydrate, 1 g fiber, 3 g protein. Diabetic Exchanges: 2 fat, 1 starch, 1 fruit.

These were delicious and very easy to make. I will definitely double the recipe next time as it made 9 small muffins in my pan. We love them!

I really liked this recipe - I make them as mini muffins (cook for the same amount of time) for my toddler. It's hard to find low sugar muffin recipes. I've made them twice - the first time as blueberry and tonight as cranberry, both turned out great! I freeze them in ziplock baggies and defrost when needed.

I turned these into peach and walnut muffins topped with almonds. Also added 1/2 tsp each of vanilla and cinnamon. However, I accidentally added too little sugar... >_< otherwise the muffins would have been great. But they looked nice, thats for sure... must try again.

These were great!! Add the 1/4 C of sugar to the list of ingredients, I did not know if this 1/4 c is included in the 5 T. But I know how to dust muffins. I need to print out for a larger batch, so any viewers increase the receipe, this makes about 4 large muffins. These were the best so far!!

So sorry, but this recipe is awful. Way too much oil, they end up tasting like orange juice and oil. They don't even smell good while baking. Not good!!
