Really a delightful sugar cookie; not too sweet, and so tender. I used an organic butter and the buttery taste shown through brilliantly. Even after several days in a covered tin, the cookie is still tender and flavorful. I didn't have time to cut them out; I just rolled into a log, refrigerated, and then cut into slices. Dough spreads, so bear that in mind. Doesn't need any kind of icing, though the next time I make these, I'm thinking a simple icing with a touch of lemon in it.
