Stuffed Pork Chops

2 tablespoons chopped celery
2 tablespoons chopped onion
2 tablespoons butter or margarine, divided
1/2 cup seasoned stuffing croutons
3 tablespoons milk
1 teaspoon minced fresh parsley
1/4 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon pepper
2 (1-inch thick) boneless pork loin chops
3/4 cup beef broth
1 tablespoon cornstarch
2 tablespoons cold water

DIRECTIONS
In a skillet, saute celery and onion in 1 tablespoon butter until tender. Transfer to a bowl. Add croutons, milk, parsley, paprika, salt and pepper. Cut a pocket in each pork chop; fill with stuffing.
In a skillet, brown chops in remaining butter. Transfer to a greased 9-in. square baking dish. pour broth into dish. Cover and bake at 350 degrees F for 30-35 minute or until a meat thermometer reads 160 degrees F. Remove chops and keep warm.
Pour the pan drippings into a saucepan; bring to a boil. Combine cornstarch and water until smooth; gradually stir into drippings. Cook and stir for 2 minutes or until thickened. Serve with the pork chops.

My husband and I loved this recipe! In addition to celery and onion, I chopped about 1/4 of a small MacIntosh apple into the stuffing. Also instead of croutons I used dry bread stuffing mix. I skimped out on making the gravy because I didn't have cornstarch, but the chops were so so so juicy that gravy would have been excessive. What I especially liked about this recipe was how the pork taste never disappeared behind the stuffing or a marinade or a sauce, like in other recipes. The ingredients really accent the natural flavor and let you appreciate it for what it is and in complement to the stuffing. Great dinner!

I enjoyed making this recipe because it contained ingredients that I had on hand and not the traditional cream of mushroom soup that I see so often in pork chop recipes. Ironically, I'm a vegetarian who cooks meat for her husband, so I can't tell you how this tasted, but I know my husband devoured it, and he usually only wants "shake and bake" pork chops. I like to make things with a little more flare. This was simple yet a little more sophisticated than the shake and bake :) I would definitely make this for any carnivorous company. The gravy was absoluetly beautiful! Securing the chops with toothpicks really helped keep the stuffing inside. I used 2 slices of dried bread cubes instead of the crutons, and it turned out perfectly.

Very good! I used dry stuffing mix instead of the croutons, and doubled the sauce so I had some extra for the mashed potatoes! I will make this one again, thanks!

I chose this recipe over others as I appreciated that it was a good, basic recipe that one could toy with, much like a good reference cookbook - i.e., no weird ingredients! I had fun putting my own spin on this great starting point and for our tastes, once I was done hubs and I both agreed these were 5-star stuffed pork chops! Since pork chops these days are so lean and can sometimes be dry, I brined my two chops in a mixture of one quart water, 1-1/2 T. sugar, 1-1/2 tsp. brown sugar, and 1 quart water for one hour in the fridge. I added dried sage and fresh, chopped rosemary to the stuffing as well as the parsley, and didn't brown the chops. I laid half strips of bacon over the top, and baked them at 375 degrees about 40 minutes. I also added a small amount of white wine to the gravy. Normally I would use chicken broth for this pan gravy, but decided to use the beef broth as written. Glad I did! It was a beautifully colored and much more deeply flavored, light gravy. Served this with Gnocchi with Sage-Butter Sauce and Seasoned Broccoli Spears, both recipes also from this site.

I really don't like stuffed pork chops, but my hubby does so I have been searching for a recipe that is so good that I don't mind eating them and this is it! The only change I make is that I double or triple the stuffing mixture. I often even put some additional stuffing on top of the chops while they are baking. Thanks for the recipe!

very yummy, easy to make with simple ingredients!! I didn't use the beef broth, I made my own pork broth in the frying pan after I finished browning them.

Very tasty! I used stuffing mix, added more spices & sauteed mushrooms, and made my own recipe for the gravy using the drippings, and it was wonderful! Will definitely keep in my collection!
