i liked the idea of cutting the peppers lengthwise, and then i just filled them with what was on hand: ground beef and peppers, brown rice, a can of black beans (rinsed), and a can of ro-tel milder. i rubbed the peppers with olive oil and roasted them for just a few minutes less than the recipe called for, maybe my oven's hot. i served the peppers with guacamole and pico de gallo. fantastic!

So Yummmy! I roasted red, yellow and green peppers for 15 minutes. I sauteed onion,garlic, and fresh basil, parsley and chives for 5 min then added small cut up pieces of chicken breasts. Let that sautee for 15 min also adding in cut up pieces of zucchini, brocolli, carrot, and 2 tomatoes. Added the feta and stuffed my pepps with this and topped with fresh grated parmesan cheese and cooked for the extra five minutes. (I did season rice mixture w/ sea salt, pepper, and paprika for some added spice) ABSOLUTELY delicious. Great base recipe to play with.

This recipe is AWESOME!!! I love it, the feta and rice and all the spices... I add pine nuts and sometimes corn and it's just heaven. Thank for this recipe, it's now a staple in my house!

I absolutely love this recipe. It's so light and tasty, and it's very easy to make. I find it only takes me 10 minutes to prepare, and 30 minutes to bake.

Delicious and light for summer! This receipe was very easy to make with little prep time. I did alter the recipe a little since I didn't have the extact ingredients on hand. Instead of bell peppers, I used sweet red banana peppers and followed the instructions with a baking time of about 15 minutes. I sauteed the 1 vidalia onion with 2 cloves of crushed garlic along with the seasoning noted in the recipe. When the onions were tender, I added thinly cut strips of turkey breast. Stirred this until the meat was almost done then added the tomatoes sprinkled in fresh chives and plain goat cheese. I ended up not mixing the rice in and used it as a side dish.

Yummy! I used red pepper and yellow onion and shortened roasting time as suggested as well as adding japenese pumpkin and mushroom. These were so good I am already looking forward to making them again.

Easy recipe. I added ground beef, mozerella cheese and fresh pressed garlic to the mixture. I then topped the stuffed peppers with a little more cheese. My husband enjoyed these, I felt like they were still missing something. I will make again, but play with recipe.

These are fantastic! A great vegetarian main dish, or side dish for meat. My peppers were smaller so they were ready to pull at 20 minutes - you just have to watch them. I also used what I had - brown rice instead of Arborio, and half a can of diced tomatoes instead of fresh - it worked great. I think the stuffing alone would make a good side dish too! So yummy...

These were really pretty easy to make. The kids ate the rice out of them, but the adults gobbled them up. I would also add yellow onions and garlic to the saute mixture for more aroma and flavor. I doubled the recipe.

Great Recipe! I made a few changes. I added ground beef, fresh garlic, and minced yellow onion. I also used whole peppers. A great tip for making sure your whole peppers don't fall over in the oven is to place them sitting in a muffin pan. Works great! This was the easiest and most delcious stuffed pepper recipe I have made! Thank you!

GREAT! I actually made a rice dish out of this to stretch a meal. I cut 3 red & yellow bell peppers into chunks and sautéed them in the oil. Added 2 cloves of chopped garlic, then the spices from this recipe, and 1/2 cup of white wine. I let that simmer until the wine was almost gone and added the rice & cheese. DELICIOUS!!! My picky fiancé ate it as well. Next time I will try the whole stuffed peppers.

my boyfriend and i were obsessed with these for a while. i didn't add any additional salt (as another reviewer stated, the feta provides enough) and i prefer to use orange and yellow peppers because they have a sweeter flavor. it's good if you add veggie meat crumbles too (you'll probably need another pepper to fill)

This was so good. I did add ground beef and 3 cloves of garlic. Also added some raisins. I ran out of feta so used half feta and half parmesan. It was super!

Wow! These were terrific. My husband and I loved them. I was a afraid of it being a little bland, so I added about a tsp or more of cracked red pepper to the tofu as it was cooking. It added a nice zip and didn't make it too spicy at all.
