Love, love, love this recipe! I did make a few slight alterations. I cooked up fresh garlic with red onions, instead of green. I use fresh basil, when I have it. I ended up using a brown, medium grain rice since I did not have Arborio. To add extra moisture to the rice, I used a little vegetable broth. I also used a can of diced tomatoes, drained, in replace of the fresh tomato, which I also did not have at the time. I have made this at home many times, it is one of my 8 year old daughter's favorites!

This was great, for me and my husband, but my children weren't really about it. I guess you can't fool them--they know they're eating bell peppers even if you cut them up! I used regular rice, cooked in a rice cooker and canned diced tomatoes. Everything else was the same, but the filling yield wasn't that large--I was left with extra pepper halves, even though I scaled correctly. The flavor is wonderful, not at all bland, but something about my scaling didn't work out. I'll try it again for sure though. The taste was worth it at least for the grown-ups!

Fantastic recipe! I normally don't go for vegetarian entrees as my boyfriend is very picky about needing some meat, but these were amazing as is. The second time i made them I threw in a little ground beef and some garlic cut back just a little on the tomatoes, they were just as good. No matter what the feta, rice, and onions were an excellent concept for combination, thank you so much for this recipe!

These were terrific! This was my first time making stuffed peppers and I was surprised by how easy they were to put together. I made a few alterations/additions: I sauteed some mushrooms and added them, I added some corn and minced garlic, and I mixed in a little tomato sauce at the end. I can't emphasize enough how good these were and I definitely forsee these becoming a staple in my household!

I loved these. The flavor was perfect. I didn't have Italian seasoning, but I mixed in some thyme, rosemary, sage, oregano and extra basil. Also, with the tomatoes I added a bit of tofu in tiny chunks, probably about 1/2 cup. The feta was the perfect flavor for this dish!

These were fantastic! My brother's vegetarian girlfriend loved them even more - took the leftovers home to eat cold for lunch the next day! I only used the red, yellow and orange peppers - beautiful on the serving plate. I also reduced the roasting time as suggested - they came out perfect!

This was good, I would say 4 1/2. We had it with some chicken for dinner and for left overs we had it for breakfast with a fried egg on top, which I liked better.

I love this recipe. I did use brown rice instead of the other kind that is called for. I also added a clove of minced garlic for some extra flavor. I will be making this for my family again.
