Delicious! I have tried three different recipes for stuffed peppers, and this one is by far the best. The feta cheese makes the rice part of the dish a whole meal in itself. I also added chopped mushrooms, which went very well with the rest of the flavors.

Very good. Even my "meat eating" husband was satisfied with this as an entree. I used brown rice to cut down on cost, and spinach instead of basil.

I love this recipe. Although I have followed the recipe to a "T" I have also used canned diced tomatoes in the place of fresh tomatoes and brown rice. Additionally I like to add 3 cloves of chopped garlic to the onions. I think the use of canned tomatoes with all the juice and the chopped garlic gives the end product a more moist and desirable taste. Very delicious and very filling!

My first rating! I can NOT cook. I HATE most "real" (=healthy) vegetables. But I took a chance and I am THRILLED to say that my whole family (including ME) loved this recipe! Thanks so much. I have gained so much confidence in my cooking as well as my taste buds! There's hope for me yet. :-)

Very good and i also tried mexican taco hamburger helper for the filling (without the meat) all the seasonings and rice were all together. Very fast and a great way to make a awesome cheap meal. Thank you for the recipe.

The best stuffed bell peppers I have ever had. I listened to the other reviews about roasting the peppers for only 15 minutes which seemed just about right. Very good. Will make again.

These are absolutely delicious! I did change it up a bit, though. For starters, i used sun dried tomatoes instead of regular tomatoes. To rehydrate them, i boiled them in low sodium vegetable broth. I used the this broth to then cook the quiona instead of rice. I forgot to buy green onions, so i used half a regular onion and sauted that with garlic in the oil with the herbs. Instead of regular pepper, i used cayanne pepper. I also added frozen corn and edamame and fresh spinach to the onion mixture. Mixed this with the feta and quiona and stuffed the peppers. There was plenty of salt in the broth and feta that i didnt need extra. This will be a regular in my house!

I subbed the italian seasoning with Mrs Dash. I also cooked some ground beef to make the recipe "boyfriend approved". I just cooked the ground beef with the green onions. Then drained the fat, added the basil, Mrs Dash, a bit of pepper, salt, and cayenne pepper. I've made stuffed peppers before. I can't recall which recipe i used, but was very disappointed. But this one is a winner.

We had all ingredients in the house, but had to substitute white rice and this dish is great. Different than the same usual stuffed pepper and we both love feta, perfect match.

These were pretty good. I think the roasting time for the peppers is way off for my oven, I may do it for maybe 10 minutes next time.

15 minutes is plenty to bake the peppers before filling. I also added black olives and used diced canned tomato instead of fresh. Fabulous! And beautiful with red peppers, looks very nice for company.

Theses stuffed peppers are awesome!!! Especially for being meatless! My husband absolutely loves them. The feta cheese brings out the flavor, I made them exactly how it says and it comes out perfect every time!
