This was greeeaaaat. I used onions instead of green onions and accidentally left out the tomatoes because i thought i had them but really didnt..oops. However it still turned out very tasty

I have the pickiest eaters (three seven year olds) and they LOVED these! I've already made them twice in less than two weeks. I used Jasmine rice and regular onions just because it was what I had in the house. Delicious!

These are very good. I used fresh basil and cooked the rice in vegetable broth. I will be making these on a regulasr basis.

Absolutely wonderful! I've made this dish over a dozen times already and it has never failed to impress. The only changes I make are to use 3 green onions and to mince 1 clove of garlic for the spice mixture. I also only leave the peppers in the oven for 20 minutes. Outstanding! :)

AMAZING! My boyfriend's non-veggie eating friends gobbled them up! I did use some red onion in place of the green onion and I couldn't tell that there was anything missing. I have not yet tried with ground meat, but definitely will for the meat eaters in the family!

This is my first attempt at Stuffed Peppers in general, and they turned out fantastic. I charred them a little, added fresh garlic and spinach to the rice mixture, and every one in the house absolutely loved it! Thanks for this great recipe!

I've been trying to incorporate more vegetarian meals and this is a perfect way to do so. I used yellow onion and oregano because that is what I had and it was delicious. I'm not usually a feta person, buy I loved these flavors together. Two thumbs up.

I have made this recipe many many times and know it by heart now. I add about 4 cloves of garlic (I really like garlic!) and use a lot more feta (I really like feta!) Other than those minor changes, the recipe is perfect! Like other reviewers, I don't keep the peppers in the oven for so long. I keep an eye on them and take them out as soon as they start to brown (about 10-15 minutes.)

Good w/green peppers, but I bet GREAT with red, orange or yellow! I used loads of fresh basil in this which was very tasty. Next time, I'll use another tomato and make the arborio in some type of broth or stock (either veggie or chicken) for even more flavor.

Great vegetarian recipe. I've sauteed crumbled extra firm tofu with the vegetables and seasonings to up the protein value and it was still wonderful.

This recipe was inspiring! I was too hungry to roast the bell peppers and stuff them, so I chopped them up and sauteed them with the onions. I added other chopped veggies like spinach, tomato and mushrooms and this came out wonderful. I read reviews that this could be bland so, of course, I seasoned to taste, just bumping up the existing types of seasoning called for. I had some leftover rice, so I just tossed in the amount I wanted. I left out the feta this time, so I did make sure to salt it. I will make this recipe again, modified and as called for. This is a very tasty dish. Thanks for the recipe!

This was good, but not great. I added some turkey mince, which I really think it needed. I think I used a bit too much rice and not enough tomatoes. I will use an extra tomato next time since it turned out a little dry and I like mine a little more "saucy"

Yummy!!! I did however used diced tomatoes with jalapeno just to give it a little kick. I also prepared the peppers and brushed them with olive oil and cooked them on the grill for about 5 minutes. I prepared all the filling so it was nice and hot. Filled the peppers and returned them to the grill topped with asagio cheese and grilled for about 5-10 more minutes. Peppers had a nice grilled flavor as well

Added sun dried tomato and a little turkey sausage ( i know defeats the meatless but hubby is a carnivore) used all yellow and orange peppers and did on the grill to avoid heating up the house ( grill has a side burner) WONDERFUL summer meal when it is 10 outside to do it all outside just use foil on the grill

I don't think that just posting some of my drool from thinking of this recipe would be adequate! This is one of my absolute favorites for a quick easy meal. I have made it many, many times and I have taken to adding in some sauteed mushrooms. We also rub the inside and ouside of the peppers with some olive oil and maybe a little sea salt just to enhance the roasting process. YUM!
