Stuffed Eggplant

A large eggplant is hollowed out, and it's flesh is mixed with Italian sausage, garlic, bread crumbs and Parmesan cheese. The filling is then stuffed back into the shells, topped with Parmesan cheese, and baked. Great as a main course but you can buy the mini eggplant and use them as a side dish or appetizer! 

Pasta with Basil

If you like basil, you'll enjoy the Italian flavor of this speedy side dish. Cook pasta according to package directions. Meanwhile, in a skillet, saute onion in oil until tender. Stir in basil; cook and stir for 1 minute. Drain pasta; add to basil mixture. Remove from the heat; stir in cheese just until it begins to melt. Serve immediately.

A zesty marinade of olive oil and red wine vinegar soaks into chopped tomatoes, minced garlic, morsels of pungent brie cheese and basil. Toss with hot fettuccini and dust with grated Parmesan cheese for a delightfully different, creamy dish.

Eggplant Fillets with Cream Sauce

An invigorating, Asian influenced dish. Serve eggplant on a bed of Asian green bean vermicelli, or rice, and top with sauce. Excellently complimented by a chilled, dry white wine. This is a recipe I created recently. It is a work in progress, so I would welcome feedback.
