This was my first time making stuffed cornish hens. I made the recipe exactly as called for for the stuffing. I used the http://allrecipes.com/Recipe/Apricot-Glazed-Cornish-Hens/Detail.aspx Apricot-Glazed Cornish Hens for a glaze. It was phenominal. They looked, smelled and tasted great! I doubled the recipe and it was perfect for 8 hens with a little stuffing left over.

i am a big fan of cornish hens,so i'm always on the look out for a new recipe.I've yet to find one that will make my kids happy.

this was actually my frst attempt at cornish hens, mymom made them often when we were growing up and seeing how my boyfriend never had them i thought it would be fun for a change. we loved the stuffing, even my bf loved it!( i dont think he noticed the cranberries in the stuffing.lol) thanks for the recipes i will definatly make this again!

This recipe was so good! I did not have dried cranberries, so I used chopped dried apricots instead which was really good! I would recommend using one hen per person however because its so delicious! GREAT stuffing!
