INGREDIENTS
COFFEE CAKE MIX:
4 1/2 cups all-purpose flour
2 1/4 cups sugar
2 tablespoons baking powder
1 1/2 teaspoons salt
STREUSEL MIX:
3/4 cup packed brown sugar
3 tablespoons all-purpose flour
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups chopped pecans
ADDITIONAL INGREDIENTS:
1 egg, beaten
1/2 cup milk
1/4 cup vegetable oil
1 tablespoon butter or margarine, melted

DIRECTIONS
Combine the cake mix ingredients; set aside. Combine the first four streusel ingredients; add pecans. Store both mixes in separate airtight containers in a cool dry place for up to 6 months.
FOOTNOTE
To prepare coffee cake: In a mixing bowl, combine 2 cups of cake mix, egg, milk and oil; mix well. Pour into a greased 9-in. square baking pan. Combine 3/4 cup streusel mix and butter; sprinkle over batter. Bake at 375 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Serve warm. Yield: 9 servings per batch.

great recipe! i made this for home so i wouldn't have to keep making it everyday. i did as the recipe stated plus added chocolate chips since i was making this for the kids. one batch lasted only a day. our family of 6 coulnd't get enough of it. it is the best heated with coffee. the kids loved it with chocolate and strawberry milk.

This was pretty good. I think next time I will put some chocolate chips in it. I like how the ingredients were what I had on hand. I also used half wheat flour and half regular flour. Next time I am going to use applesauce instead of oil. I do that in all my recipes to make it moist and less fat.

Very moist and flavorful! I used coconut oil instead of vegetable oil but it didn't give it any different taste. Very good! The little ones loved it! A recipe I will be using for a long time to come.
