  1. Whisk together preserves, vinegar, oil and lemon juice.
  2. Divide lettuce on salad plates. Layer with almonds, green onions and blue cheese. Drizzle with vinaigrette. Garnish with grated lemon peel.

  • Tip: To toast nuts, place nuts in dry nonstick skillet. Cook over medium heat, shaking pan until nuts are lightly browned.

Ok, I can only speak to the dressing; I used my own salad recipe. The mix of lemon, vinegar and strawberry is really good! Can't say I followed the recipe exactly, though. Sorry Smuckers, I used off-brand jelly. :)

I was looking to make a dressing similar to one I had at a local restaurant. This one was very good, but I used another brand of preserves other than Smuckers. I added a little bit extra sugar to make it sweeter. My husband was very complimentary! I will definitely make this again!

I use this recipe as a launch pad for lots of yummy salads :) I switch up the fruits to make all sorts of vinaigrettes. I also use fruit vinegars that I get from D'Avolio's, in Buffalo, NY. They give the dressings an extra punch of flavor! I use less jam and add fresh or frozen berries, mixing it all in the blender. This also keeps it from separating. For Father's Day, I used raspberry vinegar, mixed berry jam & frozen blackberries with lime juice instead of lemon. It was a hit! Candies pecans are also nice. Have fun with this recipe :)

I doubled the recipe accept using only 2 Tablespoons of EVOO. It's okay in a pinch, but using fresh strawberries tastes better. IMO I'll do this one again with a different flavor of preserves such as apricot, orange marmalade, raspberry, etc. Also switched out the red wine vinegar to BALSAMIC vinegar.
