Strawberry Soup IV

"This is a very nice soup to eat during hot summer days. The flavor of the wine in this soup is important, so be sure to use a good one."

INGREDIENTS

  • 1 cup dry white wine
  • 1/3 cup white sugar
  • 2 cups chopped strawberries
  • 1 cup orange juice

DIRECTIONS

  1. In a small saucepan mix wine and sugar, and bring to a boil. Let boil for 5 minutes and then remove from heat. Let cool.
  2. Puree strawberries and wine mixture in a blender or food processor. Blend until very smooth and then stir in orange juice. Chill for at least 3 hours before serving.

I was pretty skeptical about this recipe at first. I've never had soup for dessert before, but this was really good. I followed the recipe except that I didn't have 3 hours to chill it, so I put it in the freezer for an hour. It was really good, and nice and frothy. My boyfriend and I both liked it.

I got many compliments on this soup, including one from an international chef. Wonderful taste (really follow the directions about the wine, it does make a difference.) The only reason I have it low on the kid friendly is the use of the stove with the wine and sugar.
